Founded in 2012 by Jesús Soto and his wife in Cebreros, west of Madrid, Soto y Manrique works with old‐vine Garnacha planted on granite and slate soils at 700–1,100 m altitude. The estate champions organic, low‑intervention viticulture and ethical sourcing from local growers. With spontaneous fermentation in concrete, ageing in large French oak and strict respect for heritage vineyards, they’ve quickly become one of Sierra de Gredos’s most distinctive producers. Amber-tinged and textural, this skin-contact white opens with bruised apple, orange rind, and wild herbs. Aromatic and earthy, it shows hints of chamomile, dried flowers, and tea leaf. The palate is dry, grippy, and savoury with a salty mineral backbone and firm acidity. Structured yet agile, it finishes on citrus peel, spice and a subtle oxidative lift. Honest, tactile and quietly complex - this is orange wine with real nerve and clarity.
